Grilled cheese? YES PLEASE! They are so tasty and you can really get creative with them. I love the sweet and salty combination so this is a little pimped up version of an apple and brie grilled cheese. It’s sweet, tangy and ooey-gooey, melt in your mouth, cheeserrific! Plus I had some leftover squash and pear soup in my freezer so I warmed it up to eat with the sandwich and it made the perfect autumn supper! The soup is also to die for so I’ll share the recipe soon…Stay tuned!
Makes 2 sandwiches
For the apple jam
- 5 shallots, sliced thinly
- 1 apple, diced
- 1 tsp of apple cider vinegar
- 2 tbsp of brown sugar
- 2 tbsp of apple juice
- Salt & pepper to taste
For the sauce
- 1 tbsp of mayo
- 1 tbsp of grainy (or dijon) mustard
For the sandwich
- 4 slices of bread
- Brie cheese, sliced and as much as you want in your grilled cheese
- 6 slices of roasted pork (from the deli)
- 1 tbsp of butter, room temperature
In a small saucepan, drop all the ingredients for the jam and bring to a simmer on medium heat. Let cook for about 15-20 minutes mixing occasionnaly.
Heat a pan to medium-high and start assembling your sandwiches. Butter the outside of your bread slices. Mix the mayo and the mustard together and put on the inside of the sandwich. Then lay your cheese, pork and jam in between. Close sandwich and lay in the hot pan. Turn when one side gets crispy. Use a press if you have one. Remove from heat, cut in half and enjoy!
