Smoothie Parfait

I had such a huge craving for sugar tonight! Thank God I didn’t have anymore eggs or sugar because I would have definitely baked something and ate it all in one sitting. I had tons of fruit though! So here’s what I came up with. It turns your boring smoothie into an actual dessert. It hit the sweet spot…until tomorrow at least!

INGREDIENTS

For two servings

For the smoothie

  • 1 cup of fresh spinach
  • 1/2 cup of frozen pineapple
  • 1 tbsp of fresh ginger
  • 1 tbsp of mint
  • 1/2 cup of water or unsweetened almond milk

For the fruit salad

  • 2-3 strawberries
  • 1/2 banana
  • 1/4 cup of fresh pineapple
  • 1/2 orange, peeled

For the yogourt

  • 1/3 cup of plain yogurt
  • Zest and juice of half an orange

MAKING IT

Mix your ingredients for your yogurt together. Dice all your fruits for the salad, mix together. Blend the ingredients for the smoothie and then start layering! Fruits, yogurt, smoothie, fruits, yogurt, smoothie, fruits…You get the picture! I also sprinkled a bit of bee pollen for some extra protein and vitamins.
