Ultimate Caeser Salad [with yogourt dressing]

Again, I got to thank Jamie Oliver for this one! I’ve been making this salad for years and I really wanted to share it because it’s so much better to make it at home than ordering it at a restaurant. It’s healthier when you make it yourself and you get to choose what you want to put in it! More sauce, less sauce, bacon, croutons…If you’re watching what you eat then you can compromise a bit without sacrificing all the flavour.

INGREDIENTS

Makes 4 servings

For the salad:

  • 2 chicken breasts, grilled and seasoned with your favourite spices
  • 1 head of romaine lettuce
  • 1/2 cauliflower head, sliced
  • 1/2 red onion, sliced thinly
  • Wedge of lemon for presentation
  • Optional additions: bacon bits, croutons, freshly grated parmesan 

For the dressing:

  • 3 tbsp of plain yogourt
  • 2 tbsp of olive oil
  • Juice of 1 lemon
  • 1/2 tsp of Worcestershire sauce
  • 1 clove of garlic, minced
  • 1 tbsp of grated parmesan cheese
  • Salt & Pepper to taste

MAKING IT

Mix all your ingredients for the salad in a large bowl. Set aside. Make the dressing by combining all the ingredients in a small bowl. Spoon into salad (put whatever amount you want!). Serve in individual plates or bowl. If you are using, sprinkle bacon bits, croutons and parmesan over salad and lay chicken on top. Serve with a wedge of lemon.
