This recipe comes from my favourite chef and he gracefully accepted to share his secret with us. For those who’ve tasted these pancakes, you know how lucky we are to finally learn how to make them ourselves!
Drum roll please…for my DAD’S FAMOUS MASCARPONE PANCAKES! *crowd goes wild*
These are a must when you come over for brunch and I’ve never had any pancakes that quite compare. I’m sure they will become a staple in your home too. The batch you see in the pictures has been cooked by my papa so obviously they look perfect. One day I shall achieve this level of pancake greatness. Here’s how we practice:
INGREDIENTS
Makes 10 medium size pancakes
- 2 cups of flour
- 1/2 tsp of salt
- 2 tsp of baking powder
- 1 tbsp of sugar
- 2 cups of milk
- 2 eggs
- 225g of mascarpone (about 1 cup)
- Optional additions: chopped strawberries, apples, blueberries…You can put as many as you like! We used 1 cup of fresh strawberries today.
MAKING IT
Combine flour and salt in a large bowl. Mix baking powder and sugar into the milk and gradually incorporate to flour mixture. Once all the lumps are gone, add one egg at a time, mixing well in between. Add the mascarpone and finally the fruits. Cook on medium-high heat. Flip de pancakes when you see that the sides are starting to cook and bubbles start to rise in the dough. Serve with maple syrup…But that step is pretty obvious!
