Grilled Eggplant & Raita

I’ve always been very mindful of my meat consumption and have tried to incorporate as many vegetarian dishes as I can while planning my weekly meals. Over the years, I’ve grown much more creative and confident in my skills to cook without meat simply because I’ve been willing to step out of my comfort zone. I’ve learned that it didn’t have to be redundant, that there’s so much more to it than beans and tofu! The key…spices! These eggplants are packed with flavour and are really easy to make. They can be served as an appetizer or as a main dish with a salad or some couscous.

INGREDIENTS

For two servings

  • 2 medium eggplants sliced into 1cm pieces
  • A pinch of salt
  • 1/4 tsp of ground cumin
  • 1/4 tsp of turmeric
  • 1/2 tsp of grated fresh ginger
  • 1/2 tsp of minced garlic
  • 3 tbsp of olive oil

For the raita:

  • 1/2 cup of plain greek yogourt
  • 1/2 tsp of chopped fresh mint
  • 1/4 cup of grated cucumber
  • 1/4 tsp of ground cumin
  • Juice of 1/2 a lime or lemon

For the garnish:

  • A handful of chopped cilantro
  • A pinch of paprika

MAKING IT

Take your eggplant slices and lay them down on some paper towel. Sprinkle salt on both sides and set them aside for about 10 minutes. This will allow the water in the eggplants to come out and they will hold together a lot better when they cook.

Meanwhile, mix all the ingredients for the raita together. Refrigerate until ready to use.

Take a paper towel and press on the eggplants to absorb excess water. Put them in a bowl and combine with all the spices and olive oil. Make sure all of your slices are well coated. Turn on a pan to medium-heat, drizzle a little more olive oil in the bottom and cook the eggplant 3-4 minutes on one side, add 1/4 of water to the pan and cover with a lid for 5 minutes. Once the water has evaporated, flip them over and repeat for the other side. Once they are cooked through, spread a thin layer of the raita on a plate, lay the slices of eggplant on top and sprinkle with salt, paprika and the chopped cilantro.1Cheers xxx
