S’mores Cookies

I’m going camping this weekend with the family and I’m so excited! Since we are a big bunch, we decided to divide the meal planning in teams of 2 or 3. Thish and I are in charge of one lunch and we need it to be compact since it will be eaten during our hike. We obviously needed something sweet to give us a little boost of energy! They aren’t super healthy but you can’t go camping without having S’mores…You just can’t do it! So I used my favorite chocolate chip cookie recipe and added marshmallows and graham cookie crumbs to get as close as I can to the classic flavor of S’mores.

* This recipe has been tested on my coworkers and they all gave it a two thumbs up*

Makes about 24 cookies

  • 1 cup of butter at room temperature
  • 1 cup of white sugar
  • 1/2 cup of brown sugar
  • 2 egg
  • 2 tsp of vanilla extract
  • 2 1/2 cups of flour
  • 1 1/2 cup of graham cracker crumbs
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 1 cup of chocolate chips
  • 1 cup of mini marshmallows


Preheat the oven at 350°F and line a baking tray with parchement paper. Beat butter, white sugar and brown sugar together with a mixer for about 2-3 minutes until light and fluffly. Mix in eggs and vanilla.

In a seperate bowl, combine flour, graham cracker crumbs, baking powder and salt. Stir in with the wet ingredients. Finally, add the chocolate chips and marshmallows.

Form little balls with a generous tbsp of dough and place on the pan (leave a couple of inches in between). If the mix is a bit grainy don’t worry, just press it with your hands and it will stick together. Bake for about 10-12 minutes or until golden brown.
